How to prepare Coconut rice

Coconut rice is a South Indian coconut flavored rice. It is prepared with coconut milk in presser cooker. It can be prepared with grated coconuts also. That is simple coconut rice recipe. I am cooking rice with adding coconut milk and it will gives more tasty to the rice. I am using jeera rice (Jeerahasamba) we can use basmathi rice also. Coconut rice can be have with either thick gravy, pickle, puthina chutney or without any side dish. Let’s prepare the tasty Coconut rice.

Basic information :

Preparation time : 15 Mins
Cooking time : 20 Mins
Serve : 4 Persons

Ingredients :

Jeer rice : 1 Cup
Coconut : 1 No
Bay leaf : 1 No
Cinnamon : 2 Nos
Cardamon : 2 Nos
Cloves : 4 Nos
Onion : 1/2 no
Green chilly : 3 Nos
Chopped ginger : 1 Tsp
Curry leaves : Few
Coriander leaves : Few
Mint leaves : 3 Leaves
Salt : As per taste
Oil or ghee : 3 Tsp

Method :

Make the grated coconut and grind with adding warm water and drain, squeeze the milk. Make it for 2-3 times, so that we can get more coconut milk.

Wash the rice and keep it aside. Heat oil in a presser pan, add  cinnamon, cardamon, bay leaf, cloves.
Add chopped onion, green chilly, ginger, curry leaves, coriander leaves, mint leaves and fry well.

Add washed rice and fry a little.

Add coconut milk in 1:2 ratio and close the cooker with lid and leave for 20 minutes in low flame.

After 20 minutes switch off the flame and wait for 5 minutes. After 5 minutes, open the lid, stir and transfer to the serving dish and serve hot.
