Vegetable Biriyani

Biriyani is one of the favorite dish in my home and almost all the families. I made biriyani this time with mixed vegetables. It is made with mixed veggies, spices and curd. This is very tasty single pot rice dish, with south Indian flavor. I am adding beans, carrots and potatoes. We can also add cauliflower, green peas, and other veggies. It is filled with vegetables, so this is a healthy rice recipe. It is goes with any raitha or any veg curries. I made this yummy rice recipe with Brinjal raitha. Serve for : 5 Persons
Ingredients :
Biriyani rice : 1/4 Kg
Ghee and oil : 4 Tsp
Cinnamon : 2 Nos
Cloves : 3 Nos
Cardamom : 1 No
Bay leaves : 1 No
Onion : 1 No
Ginger garlic paste : 1 Tsp
Tomato : 1 No
Green chilly : 1 No
Turmeric powder : 1/4 Tsp
Chilly powder : 1/2 Tsp
Salt : To taste
Curry leaves : Few
Coriander leaves : Few
Mint leaves : Few
Curd : 1 Cup
French beans : 50 Gm
Carrots : 1 No
Potato : 1 No
Method :
Heat oil and ghee in a pressure cooker, add cinnamon, cloves, bay leaves, cardamom.

Add onion slices, curry leaves, coriander leaves, mint leaves and saute well. Add ginger garlic paste. Add chopped tomato and saute well. Add chopped vegetables.

Add the masala powders, salt and rice. Add curd and water in 1:2 ratio.

Close the cooker and wait for 15-20 minutes. After 20 minutes, wait for 5 minutes to pressure release and open the cooker. Serve it hot with brinjal raitha..
