Schezwan sauce is a Chinese chutney which is used for making various types of dishes. Whenever I go with our family to the Chinese restaurants, I mostly will order schezwan fried rice. I like the taste very much. My hubby always says, in restaurants they will use ajinomoto for this taste. I decided to prepare the sauce at home without adding ajinomoto. It is so nice and my daughter likes very much. She ask me to prepare all the dishes using this wonderful sauce. In this post, I’m going to share schezwan sauce recipe. Later I will update various dishes like, Schezwan fried rice, schezwan noodles, veg fries with schezwan sauce etc.. This is very easy preparation and we can store the sauce in refrigerator for at least one month. The dishes with schezwan sauce will little spicy, but no matter, the taste will be unbelievable. In red chilies, remove the stem part and remove the inside seeds. Soak in hot water for 5 minutes to make softer. Grind the soaked red chilies as a paste. We can use soaked water to grind.Crush the garlic. We can also fine chop. Grate the ginger. Heat oil in a kadai, add crushed garlic and grated ginger and fry till it comes golden brown.After getting golden brown, add ground chilly paste and stir.After 2 minutes of stir, add salt and pepper powder.Add tomato sauce, soy sauce and stir well.After 5 minutes of stir, switch off the flame.After cool down, store a bowl or container.
