The main and important confusion for all the mothers of school going children is recipe for our kid’s snacks box. Today I prepared veg kathi roll. It is full of veggies and cheese and the dough made with maida. We can prepare this recipe with wheat flour. If we prepare with wheat flour, after some time the roll will be watery. For roll recipe, maida is the best flour. For the stuffing, we can add any veggies like carrots, beans, potatoes, mushroom, paneer etc.. I’m adding sweetcorn, carrots along¬†with onions and capsicum. My daughter like this roll very much and used to prepare this veg roll very often for her snacks box. Very easy to prepare and all kids will definitely like it. In a mixing bowl, take maida, add salt and oil, add water to make a soft dough. Prepare the dough and cover it with the lid for minimum 15 mins.

veg-roll-7Peel off the sweet corn kernels and boil it. Heat oil in a kadai, add onion slices, curry leaves and saute till it turns golden brown.

veg-rollAdd grated carrots, boiled corn kernels, capsicum slices.

veg-roll-2Add salt and pepper and stir for about 4-5 mins.

veg-roll-3Add chopped coriander leaves and switch off the flame.veg-roll-4Kneed the dough slightly, divide the dough in equal parts. Spread the dough using rolling pin as thin rotti. Heat the tava, make rotties.veg-roll-6In a rotti, spread mayonnaise in center. Add saute veggies.
