Butter beans is also called lima beans is a healthy bean and soft in texture. It is very rare to get as fresh. But we can get as dried beans in packets. I got this healthy bean as fresh from Madurai, Tamil Nadu. My aunt bought this for me. This amazing beans is having amazing health benefits. It is filled with fiber. This fiber helps to level the cholesterol and blood sugar in our body. It helps to regulating digestive disorders. Today, I prepared a different type of gravy using this soft, buttery butter beans. This is very tasty and we can have with chappathy, poori and all other tiffin items and also with rice. Let us prepare the tasty and wonderful recipe of butter beans curry.
Take out the beans from the outer skin.Wash the beans and cook it in the pressure cooker leaving 3-4 whistles. Chop small onions (shallots), Ginger, garlic, coriander leaves, curry leaves. Heat oil in a kadai, add fennel seeds. After the seed pops, add onion and other ingredients. Saute till it gets golden brown.Add chopped tomatoes and saute till its smash.Add the tempering in a mixer grinder after it cool-down and add turmeric powder, chilly powder and coriander powder. Grind the masala as a fine paste.Heat oil in a kadai, add cinnamon, cloves.Add ground masala and fry for 2-3 minutes.Add boiled butter beans with water and mix well. Boil it till the it becomes gravy. Switch off the flame when it comes correct consistency.Transfer the curry in serving dish and garnish with coriander leaves.
