Egg kadai or Kadai egg curry… Usually we will order some side dish for Naan, pulka and Rumali roti and even Fried rice. Kadai panner, Mushroom kadai, Kadai chicken are the famous side dish recipes. Today, I made the same kadai masala with protein rich eggs. But I did not boil the eggs . Instead of boiling the eggs, I break the eggs and directly add it to the gravy. Really it tastes nice and looking also very attractive. The gravy is suitable for all the tiffin or breakfast items. If we make this kind of different recipes at our homes, definitely all the family members will love it and we will get appreciation for our creativity. Method :

First for making Kadai masala powder, dry fry the ingredients which is given under the masala powder heading.After fried dry ingredients, make it cool down and grind as coarse powder.Heat oil in a kadai, add chopped onions, garlic, ginger. Saute well. Add chopped tomatoes. Saute till tomatoes turn mushy.When tomatoes smashes, add chilly powder, coriander powder, turmeric powder, salt.Saute with onion tomatoes till the raw smell goes.

Let it cool down. After that grind as a fine paste.Now Add oil in the kadai and heat. Add sliced onions, curry leaves and saute well.Add capsicum dices.We are adding the ground paste now and mix it.Leave it for 2-3 minutes for boiling. Now add the ground masala powder.Mix it well and cook for 2 minutes.It is time to add eggs. Break the eggs and directly add it in to the gravy. Close the kadai with the lid and wait for 3-5 minutes.5 minutes is good enough to cook the eggs. After cooked nicely, garnish with chopped spring onions.Ya.. colorful tasty kadai egg curry is ready to serve with all the tiffins and rice.
