Beetroot pachadi or Beetroot raitha… Actually beetroot is a great vegetable which is having a lot of nutrients and fiber. Most of the kids are not like this colorful vegetable beetroot. Instead of making normal beetroot fry like poriyal, if we prepare like this kind of pachadi or raitha with curd, most of the kids will love it. This is one of the famous Onam recipes in Kerala. Peel off the beetroot and chop finely or we can grate it.In a blender make course grind coconut, green chilies, cumin seeds(jeera), ginger. Heat oil in a kadai, add mustard seeds. After the seeds pops, add curry leaves and red chilies.Add chopped beetroot and saute well till the raw smell goes.When the raw smell goes from the beetroot, we can add ground coconut mix and saute for 4-5 minutes.Finally, we are going to add thick curd and mix well.Wow.. the pinkish beetroot pachadi is ready for serving.Try this wonderful healthy raitha and post your colorful comments.
