Poha vegetable upma… Avalaki bath.. This is absolutely a vrat recipe for the festival Navrathri, because this no onion no garlic recipe. Poha (Aval) or rice flakes (avalakki) are having amazing health benefits like carbohydrates, protein. Poha is rich in Iron and Vitamin B. Easy to digest and easy to make different kinds of dishes using poha. We can get two varieties of poha in markets, one is thick and thin flakes. In this Poha veg upma recipe, I used thin flakes. For using thick flakes, we need to soak for at least 5 minutes. But, using thin flakes, we need not soak. We can directly add into the kadai and spray little amount of water is enough to cook. Very easy to prepare this yummy dish Avalakki bath. Let us prepare Poha veg upma.
Take required amount of poha(aval) and keep it aside.In a kadai, heat ghee or oil and fry cashews and keep it aside. Instead of peanuts, I’m using cashews.Add chopped potatoes and saute till potatoes cooked adding salt. After the potatoes cooked, keep it aside.Heat oil in a kadai, add mustard seeds.When the seeds spluttered, add crushed green chilies and ginger and curry leaves. Saute for a minute.Chop carrots and add it in the kadai. Saute well till the carrots turned half cooked.Now add fried potatoes, turmeric powder, salt.We are adding thin rice flakes without soaking.Spray little amount of water for cook the poha. Stir occasionally. After the poha cooked, squeeze 1/2 lemon.
Finally, add fried cashews and switch off the flame.Hot poha veg upma is ready to serve. No need any side dish for this recipe. If we want, we can make coconut chutney for side dish.Try this Vrat recipe and be blessed.
