Navrathri special viratha biriyani… This is prepared without adding onions and garlic. So, this recipe is called no onion no garlic vrat biriyani. In this Navrathri festival, most of the people will do fasting or will not add onions and garlic. Without onions and garlic what can be prepared as main dish. Today, I prepared a yummy variety rice for Navrathri vrat veg no onion no garlic biriyani. Less spicy, less masala and packed with full of healthy vegetables. Let us prepare Navrathri viratha biriyani with step by step pictures.
Wash basmati rice and soak for 30 minutes.After 30 minutes, add in boiling water. Also add bay leaf, cinnamon, star anas, cloves and 1 teaspoon of ghee.Using blender grind green chilies and ginger. Cook the rice for 3-5 minutes and strain the water.Heat ghee or oil in a kadai, add cinnamon, cloves and star anas.Add chilly garlic paste, curry leaves and saute for a minute.Chop required vegetables and add and saute well. I added colorful capsicums also. Now we are going to add chilly powder, cumin powder, fennel powder and salt.
Take 2 tablespoon of curd and mix with vegetables.I’m adding some water to cook the vegetables.After the vegetables cooked, take a ghee greased heavy bottomed pan or pressure cooker and add the vegetable masala.Add cooked rice as second layer.Again vegetable layer and rice layer and finally add chopped coriander leaves and some saffron. Heat dosa thava and place the cooker with lid and place in low flame for 20 minutes.Switch off the flame after 20 minutes and rest for 5 minutes before open the lid. Open the lid and mix the rice with the veg masala.Serve this wonderful biriyani with carrot raitha. Try this vrat biriyani and be blessed.
